Jell-O Week

It is Jell-O Week.  So this week’s recipe is inspired by the week long celebration of the classic American brand of gelatin dating back to 1897.  This classic Jell-O Salad has been popular for years at church gatherings and family functions.  This recipe is from my aunt’s recipe box.  It was one of her favorites to make.  It is easy and can be made in advance.  It is named a salad but so delicious it is often enjoyed when eaten as a dessert.

Janette’s Jell-O Salad

2 Small Packages of Jell-O – your favorite flavor – example Raspberry, Orange or Wild Cherry
1 large can of Crushed Pineapple
2 cups of Buttermilk
8 Oz Container of Cool Whip
1 cup of pecans

Mix 2 small packages of Jell-O with the large can of crushed pineapple in a microwave safe bowl.  Heat in microwave for about 1 minute until Jell-O is dissolved.  It normally takes 1 minute and 10 seconds for the Jell-O to completely dissolve in the Jell-O powder.  Remove from microwave, add 2 cups of buttermilk to mixture stir well then fold in 8 oz of Cool Whip.  Add one cup of pecans.  Refrigerate until congealed.   It can be refrigerated in a Jello-O mold or 9” x 13”.
