Chocolate Pound Cake

This chocolate pound cake recipe has been baked since the 1960s as a family favorite.  It was one of my grandmother baked often.  I remember her baking it with found childhood memories. We would often prepare the batter, put it into bake and play game of Monopoly waiting for it to be ready to eat.  We would often play until the cake was done. It cooks at 300 degrees for 1 ½ hours so it does take a little time – but well worth it.It is really rich and delicious.  The best thing I like about the recipe is it uses cocoa powder and does not require melting chocolate using a double boiler.  The use of cocoa powder makes this an easy and fun cake to prepare with children.

Chocolate Pound Cake

2 Sticks of Butter
½ Cup of Crisco
3 cups of Sugar
3 cups of Flour – measured after being sifted
½teaspoon of Baking Powder
½ teaspoon of Salt
1 cup Milk
2 ¼ teaspoons of Vanilla
5 large eggs
½ cup of Cocoa

Cream together butter and Crisco, add sugar. Blend well until first three ingredients are completely combined. Add eggs one at a time.  Sift together flour, salt, baking powder and cocoa, add combined dry ingredients to the creamed mixture alternating with milk and vanilla.  Mix well.  Pour into greased Bundt or tube cake pan.Bake at 300 degrees for 1 ½ hours in a greased baking pan.

Please note the flour is sifted and measured then resifted a second time with the baking powder, salt and cocoa. The texture of the cake is very fine and well worth the extra work to sift the dry ingredients. I normally combine the milk and vanilla together to make alternating with the dry ingredients easy. The batter is very thick and will need to be placed around the pan it will not settle evenly on its own, the batter is too thick. It is very important to time this cake 1 ½ hours is normally the perfect baking time for a clean toothpick test. Cool for about 35 minutes before removing from the cake pan after baking.Simply dust the top of the cake with a powder sugar using a sifter to accomplish. The powder sugar provides a nice finished look.  ENJOY!
